Spicy “Cheddar” Kale Chips

Recipe

  • 6 bunches of kale
  • 2 C. cashews –soaked (soak 2-3 hours)
  • 2 C. sunflower seeds– soaked (soak 7 hours or overnight)
  • ½ C. sundried tomato soaking water (since many of our raw recipes have sundried tomatoes it’s always good to have some soaked ones around)
  • ½ C. chickpea miso
  • ¼ C. olive brine
  • 2 Tbsp. lemon juice
  • 2 Tbsp. smoked paprika
  • Salt to taste

Instructions

  1. Remove the stems from the kale and cut into small pieces.
  2. Let the kale air out as much as possible before coating.
  3. Mix all ingredients(except kale) together in a food processor.
  4. In a large bowl, massage the mixture into the kale.
  5. Place the kale on dehydrator trays and dehydrate at 118 degrees overnight or until coating is dry. (if using a conventional oven to dehydrate, please set oven at lowest temperature setting, place kale on baking trays lined with parchment paper, place trays in oven, keep door slightly open, check after 3.5 hours. Add time until the coating is dry.
  6. Conventional ovens dehydrate more quickly so often the dehydration time is cut in half. Use the base time as you can always add additional time.)

Note: The stems can be used in smoothies as an extra added boost of green vegetables

Raw Cheezy Okra

  • 5 C. okra (cut into one inch pieces)
  • 2 C. cashews – (soaked 3 hours)
  • 2 C. sunflower – (soaked 4 hours)
  • ½ C. sundried tomato soak water (sundried tomatoes are a great staple to have in the fridge so soak some for a half hour and keep the water for preparations like this)
  • ½ C. chickpea miso
  • ¼ C. olive brine
  • 2 Tbsp. lemon juice
  • 2 Tbsp. smoked paprika
  • Salt to taste

Instructions

  1. Mix all ingredients (except okra) together in a food processor.
  2. In a large bowl, massage the mixture into the okra.
  3. If you feel there is little sauce for your okra, add more.
  4. Place the okra on the dehydrator trays and dehydrate at 118 degrees overnight or until coating is dry. (If using a conventional oven, set at lowest temperature, place the okra on a baking sheet lined with parchment paper, place baking sheet in oven leaving the door open slightly, use an oven fan if oven is equipped with it, dehydrate until the coating is dry.)

Raw Zucchini Chips

  • 6 zucchinis
  • Seasoning of your choice

Instructions

  1. Slice the zucchinis with a mandolin.
  2. Place the zucchini vertically to get 1/8-inch thick round chips.
  3. Season with salt, pepper, vinegar, and olive oil and dehydrate at 115 on mesh trays until crispy.
  4. You can use any salad dressing for seasoning, too.
  5. When you place the zucchini chips on the trays, make sure they are not on top of each other because they will stick together as they dehydrate. (If using a convention oven, set at lowest temperature setting, place zucchini chips on baking sheets lined with parchment paper, place trays in oven, keep door slightly open, dehydrate until crispy.)
