• 4 Sweet Potatoes
  • 1/2 C. ginger Juice
  • 1/2 tsp. Himalayan Salt
  • 1/2 tsp. star anise
  • 3/4 tsp. chipotle
  • 1 diced red bell pepper
  • chopped snap peas (handful)
  • 1/2 C. coconut milk
  • 1/2 C. coconut flakes
  • 1 Tbsp. cacao nibs

Chop sweet potatoes uniformly and place in food processor. Pulse first then process until smooth. Stir in peas and bell peppers. Mix all remaining ingredients, except nibs in separate bowl. Pour this mixture over sweet potatoes and stir. Stir in cacoa nibs.  Enjoy!
