The glycaemic index (GI) is a rating system for foods containing carbohydrates. It shows how quickly each food affects your blood sugar (glucose) level when that food is eaten on its own.
Dr. Cousens extensive research over some thirty-five years has confirmed that a low-glycemic diet is one of the key components for good health, optimal gene expression, a healthy living colloid field, stable blood-sugar levels, and a quiet mind. These all support spiritual awakening. To identify a food as high or low-glycemic is a statement about how fast that food raises the blood sugar.
Take the apricots off of the recipe and you will have a low-glucemic dessert.
- Juice of 4 oranges
- 1 C. strawberries
- Pinch of salt
- Stevia, to taste
- 1 Tbsp. agar agar
- 1/2 C. purified water
In a small sauce pan, dissolve Agar Agar in purified water over low heat and set aside. In a blender, blend together orange juice, strawberries, salt, and stevia until smooth. Once desired sweetness is achieved, add dissolved agar agar while blending. Pour into ice cream maker and freeze for 2-3 hours before serving. (If you do not have an ice cream maker, make sure the sorbet mixture is cool, pour into a metal 9″ cake mold or another shallow, freezer safe container, allow to freeze, take out of the freezer when completely frozen, blend again in the blender using a little bit of water, it should be the consistency of slush, and place back in the freezer. When you’re ready just scoop, serve and enjoy!)
- 4 C. apples
- 1/4 C. raisins – soaked 1 hour
- 3/4 C. ground flax seed
- 3 Tbsp. lemon juice
- 2 tsp. cinnamon
- Pinch of salt
Blend or food process ingredients until smooth. Spread evenly on drying sheets. Dry at 115 F. for 3 hours, rotating trays every hour. Flip drying sheets face down once surface of wrap is no longer wet. Continue drying for another 3 hours. Peel away drying sheet once the wraps release. If they stick to the drying sheets continue drying. Do not over dry or they’ll become brittle. If they do become brittle, mist them with water. Fill wraps with your favorite fresh fruit and a creamy cashew filling. (If using a conventional oven please turn to it’s lowest temperature setting, place wrap mixture on a baking sheet lined with parchment paper spreading evenly, check in 1.5 hr. roting sheet or sheets every 1/2 hour. flip parchment paper face down on baking sheet for another 1 hr. or 1 1/2 hr until wraps peel away from parchment paper easily if they stick then leave in a little longer. You do not want to overdry as they will become brittle. IF they do become brittle mist with water. Conventional ovens dehydrate more quickly so often dehydration times of cut in half.)
Feel free to add a low-glycemic (Smart Sweet is excellent and can be purchased online) sweetener and spices that compliment the fruit or fruits you choose.
All the repices listed above are low-glycemic and very healthy. Ideally you would take the dates, raising, figs, dried berries out of these repices to make them more balanced and properly low-glycemic.
